Crock Pot Paleo Beef Curry
So today is my hubby’s birthday. Happy Birthday Benny Boy! What do you give the man who has everything? Ha! That man is a Saint and is deserving of whatever he wants (but shhh don’t tell him that, I don’t want to give him a bigger head than he already has). Come on, let’s be honest, he puts up with me on a daily basis and [rarely] complains about it. I tell a lot of people this, but we are both very lucky. We got married stupid young, so young we barely knew not only what marriage really was (because then again, who really does), but more so we barely knew who we were and what we wanted from life. What 22 year old knows anything about what they want besides what they are eating that day? Anyway, I am so thankful over the years that we grew TOGETHER and not apart. We have very similar priorities and enjoy the same type of healthy and active lifestyle, although he thinks fancy cars and anything name brand is worthless. I am still working on those two because usually they would be a deal breaker for me, but all jokes aside, the man does not want anything for his birthday. Ben literally said this morning, his family is the best gift. How do you top that? Maybe with a very tasty and not healthy NON Paleo Cupcake?
How about a NEW testy and healthy Paleo crock pot meal instead? Sold. Last week I updated the blog adding categories under the recipe menu bar so if you want to search for just beef recipes only beef ones will come up. Amazing, right? God, I love technology. Just trying to make your lives easier, ya’all; it is the least I can do. Anyway, when I did that I realized I am obsessed with pork dishes (duh) and beef gets the cold shoulder so I made not one but TWO new beef crock pot meals for you all.
So back to the Crock Pot Paleo Beef Curry, it tastes like “curry” but it doesn’t actually have the curry spice in it, go figure. It does have turmeric, which is a spice I do not use often but don’t let that discourage you from making this dish. At first this recipe reminded me of my Crock Pot Paleo Coconut Curry Pork Tenderloin Stew but later I realized it was lighter and did not have that strong curry flavor. So if you are not too fond of the boldness of curry, this is the recipe to try. It is light and yet still aromatic, a perfect combination. The best part is this meal is very versatile. I first served it over my plain No Grain Cauliflower Rice and the next night I just added more of the broth to the meat and ate it as a stew. I actually thought the leftovers were better than the first night, maybe it needed an extra night for the sweet potatoes to soak up the broth. Whatever it was, when my husband and I served it the following night as a stew, we realized we finished our bowls without talking at all through the process. It was that good.
- 2 lbs of beef roast/stew meat/ sirloin tip, cut into chunks
- 2 tablespoons of olive oil
- 1 yellow onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon of cumin
- ¾ teaspoon of turmeric
- ¾ teaspoon of cayenne pepper
- 1 tablespoon of grated ginger
- 1 cup of beef broth
- 1 large sweet potato, diced into 1 inch cubes
- 3 big handfuls of baby spinach (optional)
- salt and pepper to taste
- If you have a crock pot that browns inside your crock pot than you can do everything in the crock pot and avoid dirting an extra pan. If not in a large skillet over medium heat add the oil, onion and garlic and saute it all for about 4 minutes, stirring constantly until onions are translucent.
- Add the spices, ginger, diced sweet potato and beef broth to your sautéed veggies and cook for about 3 minutes then take off the heat.
- Add the beef to the crock pot pouring over your vegetables and broth.
- Cook on low for 8 hours.
- Thirty minutes prior to the end of the cooking process, stir in the spinach if you are using it.
- Serve it over a no grain side like cauliflower rice and eat up OR eat it plain as a soup or stew! You cannot go wrong.
