Avocado Tomatillo Sauce
Avocado Tomatillo Sauce (AKA Lisa’s Special Sauce, Liquid gold, etc)

What tomatillos look like up close. I never knew they came in a protective shell.
Ok honestly this sauce is so good that I have considered using it as perfume! No joke, I do not tell a lie.
I got this recipe from my BFF, Lisa, who is also an amazing cook. I know this sounds bad, but Lisa actually cooked this sauce for the first time for my husband (and her family too) when I was out of town for work. I did not hear the end of it from Ben about how delicious this “avocado sauce” was so I knew I had to try it for myself. After I tried it, I finally understood why Ben was obsessed with his new favorite sauce; it honestly is THAT good. To top it off, it goes with everything. Of course try serving it as an accompaniment to any “Mexican” style protein like beef, pork, or chicken. For my vegetarian friends, you can serve it over black beans, veggie stir fry and even over your morning egg tacos. Or at your next party or get together, serve it with tortilla chips instead of your old bland salsa or store bought guacamole. Quite frankly it can be eaten plain and by the spoonfuls so whichever way you decide, you will not go wrong.
The only downside, if there is one, I see is I can’t quadruple (or 10ox) the recipe because the avocados can go bad so quickly so you have to make 1 or 2 servings at a time. I don’t know if it ever keeps past two days because it always goes so fast in my home, I can’t make enough.
Some of OurFullPlate’s classic meals will also go good with this special Avocado Tomatillo sauce. Try it with my Paleo Crock Pot Cuban Pork Pernil, Chicken Enchilada, Holy Moly Pork Shoulder Goodness, or a Cubana’s Mexican Style Pork Tenderloin. The skies the limit folks.
- 2 avocados
- 4 little fresh tomatillos, keep peel on
- 3 garlic cloves
- 1½ limes, juiced
- 6-10 sprigs of cilantro
- ¼ teaspoon of salt
- Boil tomatillos for about 3-4 minutes. Once boiled remove skin and cut in half.
- Add all ingredients in the food processor and hit blend until smooth.
- That's it! Enjoy!
