21DSD Sweet Potato Puree

My 21DSD Sweet Potato Puree "Pick Me Up" saved me while doing the detox the second time around. It's sweet and not only satisfies that sweet tooth craving, but it gives you the extra energy you need after an intense workout. Try it, you will not be disappointed and it so easy to make ahead and take with you on the go!
  • 3 medium sized sweet potatoes (about 2lbs)
  • 2 tablespoons of coconut oil, warmed and in liquid state
  • ½ teaspoon of cinnamon
  1. Preheat oven to 400 degrees
  2. With a fork, prick holes into each sweet potato on all sides.
  3. Place sweet potatoes on a lined cookie sheet and cook for one hour. Depending on the size of your potatoes, you will need more (if bigger) or less (if smaller) time. Half way through the cooking process around the 30 minute mark rotate and flip over your sweet potatoes to help them cook evenly throughout.
  4. Once cooked, remove skin and place in your food processor along with your warmed coconut oil and cinnamon and blend. If you don't have a food processor or (if you are lazy like me sometimes and do not want to clean another kitchen appliance) than feel free to use a manual hand masher or ricer to blend.
  5. End result is a very, very sweet potato puree. Once mixed, I separate them to ½ to 1 cup servings and reheat them and eat them after a workout to replenish my energy levels. This recipe yields about 2 cups of pureed sweet potato and can last in your fridge up to five days. You can also serve this as a side for any dinner or as dessert as well! The options are endless!
