Leftover Makeover: Moroccan Pork Stew

Don't be a fool, try this Moroccan Pork Stew. The flavors are unreal!
  • 5 pounds of boneless pork shoulder or butt, trimmed of excess fat and shredded into 2-inch pieces
  • 2 tablespoons of paprika
  • 4 teaspoons of ground cumin
  • 1 teaspoon of ground ginger
  • 1 teaspoon of ground cinnamon
  • ½ teaspoon of cayenne pepper
  • kosher salt and black pepper
  • 2 medium onions, sliced ½-inch thick
  • 4 cups of low-sodium chicken broth
  • 2 tablespoons of cider vinegar
  • 2 (15 oz) cans of chickpeas, rinsed
  • ½ cup of dried apricots, halved
  • ½ cup of raisins
  1. In a Dutch oven or large pot, toss the shredded pork with the paprika, cumin, ginger, cinnamon, cayenne, 2 teaspoons of salt, and 1 teaspoon of black pepper.
  2. Scatter the sliced onion over the pork and stir.
  3. Add the broth and cider vinegar to the pot and bring to a boil. Reduce heat and simmer, covered, until tender, about 30 minutes.
  4. Halfway through the cooking process, about 15 minutes, add the chickpeas, dried apricots and raisins and simmer, until the cooking liquid is slightly thickened, 15 to 20 minutes more.
